- Apricots and Cream with a slight wine flavor from the Nelson Sauvin
Got 2nd place in a local homebrew competition and got to brew this recipe (with a few changes) at a local brewery.
Some of the ingredients were stipulated by the brewery for the competition, so feel free to change whatever you like.
7lb Pilsner Malt
2lb Flaked Wheat
Mashed @ 153-154 in 4 gallons for 60 min
Sparge with 4 additional gallons
90 min boil
@60min 1oz Columbus Hops
@15min 0.5oz Nelson Sauvin Hops
@15min 0.5lb Lactose
@15min 1 pinch of Irish Moss
While cooling the wort, puree 3 cans (15oz each) apricots in juice(not in syrup)
When wort reaches 70F put into primary fermenter with apricot puree and pitch 1 packet US-05
Ferment for 3 weeks at 70F (or until fermentation is complete).
Cold crash and add 2oz BSG Brand Apricot Flavoring into keg or bottling bucket.
