4 lbs Orange Blossom Honey (Local) Added at flameout

.25 lb Carapils
.5 oz Citra Leaf @ 60min
.5 oz Citra Leaf @ Flameout
1 oz Lemon Drop Pellets @ Flameout
4 Stalks of fresh Lemon Grass, crushed @ Flameout
.5 tsp Irish Moss @ 15min
Mash @ 154*F for 60 min.
All honey added after flameout to keep some of the flavor.
I crushed the lemon grass stalks to break out the aroma and flavor and added right at flameout with the Lemon Drop Hops, looking for the citrusy, floral aroma and feel. My efficiency was a little low because I was just breaking in my new equipment but I think it turned out ok. My actual numbers are lower, so my ABV ended around 7%.
Fermented with US-05 for 30 days @ 66-68*F. Primed with corn sugar and bottled.
The aroma of lemon grass hits you in the face immediately. Taste and feel are dry, and citrusy, a little sweet, but not to much. More mead than ale on this one, but the malt is present and so are the hops.
