I'd keep this away from the wine forum, but I think Daze has a point.

That's three cans of minute maid fruit punch, 1.5lb of sugar and some Nottingham I washed from a batch of cider. Shouldn't be too highbrow - should be a lot of fun :D

I actually pitched a beer yeast in here, full disclosure.

I'm thinking this wouldn't benefit at all from aging (I mean, when I take samples I'll give it a shot and see if it's hot or whatever). I'm thinking if it quits at 5-7% I'll be more than happy and won't even bother to rack it off the lees.. so, I suppose the answer is "about two weeks or when the bubbles stop" (that's a piss-poor metric for real wine but... yeah)
