Too little milk

Used only one gallon milk instead of two in a Swiss recipe. Think it is worthy aging or should I just trash it?
 
This is good because the flavor would be stronger. Thermophilic cultures are better than mesophilic meaning it should ferment.
 
Did you fortify with cream? Your fat : protein ratio might be off. What recipe were you following?

Edit: Nevermind. This post is over a year old. Apparently @brewfrog and I need to do a better job of checking the date of the original post before commenting.
