I just about start brewing with all grain and i wanted to know. How many pounds of barley can you put in a 5 gallon mash tun? I see a lot of recipes that have 10 12 even 15 pounds and don't want to buy one that will not fit in the tun. Boob! Prost!

Can you add more sugar to your beer while in the fermenter to to increase the alcohol content?

I have a German Light Ale that has been fermenting for 6 days and has no more co2 coming up. Its in a 6gal food grade bucket and i don't have a carboy. Should i leave it in there longer? I have heard people say to leave it for a week and some for up to 5 weeks? Any suggestions? thanks...
