I've been reading a lot about how much to stir wort during a chill and decided to do the following on a 1-gallon batch:

-Evening before before: Sanitize a tray and 16 oz. stainless steel water bottle, fill with ice water in freezer, leaving room for expansion (cap on)
-During boil: Fill an igloo 1/2 full of ice.
-Boil wort
-A few minutes before boil termination: fill igloo 2/3 full with water
-Remove lid and carefully place kettle in ice water.
-Fetch water bottle and gently (and carefully!) stir wort with bottle.

This got my wort down to temp really fast, so I was thinking about getting a copper water bottle, but I'm wondering if y'all saw anything wrong with this method?

Sounds fine.
I doubt switching to copper would make a noticable difference. A spoon would probably even work just as well.
