I am still quite new to all grain brewing (did about 6 batches now, 1 being blue moon clone and other the watermelon wheat) and I have been typically using other brewer's recipes, but being summer I designed this beer:
7.5lbs Pale Malt 2 Row
.5lbs Cara-Pils/Dextrine
.5lbs Caramel/Crystal Malt 10L
Mash @ 152F 60mins
1.15oz Saaz @ 60mins
1tsp Irish Moss @ 10mins
Secondary (racked on)
.75lbs Lactose (boiled with 2 cups of water)
4lbs Strawberries (cut, frozen, thawed)
6lbs Bananas (cut, frozen, thawed)
I added all these to one container and egg beated them together
I did run into some issues. There was a lot of fruit in the secondary for the 23L carboy and within 48hrs this thing really took off. A bunch of fruit was pushed into the blow off bucket and the blow off tube actually plugged and shot off the top and hit the ceiling. On my next try I'm going to puree the mixture, as I used a egg beater this time (I didn't know). This beer is cold crashing right now and it has been for 3 days. Everything starting to drop and I had a sample today. It had a good banana/strawberry smell, strawberry on the back and banana up front. It was a nice light beer, and the flavors weren't overpowering. I added lactose to give it a more"smoothie cream" flavor, I didn't notice it too much in sample so I may add another .25lb when kegging. Ill be anxious to try it once its carbed. This is the v1.0, so I'm going to make necessary changes.
